Pounding fufu




The thump of mortars rhythmically pounding fufu, cassava sometimes mixed with yam or plantain, is the sound of Ghanaian supper time. Eaten with various soups with meat or fish it is a highly popular dish. In preparing fufu the rhythm is vital. One person pounds and as the heavy mortar is lifted, another moistens and turns the mixture. So missing the rhythm would mean crushing the fingers of the person turning the mix, as sometimes happens.
